It is very delicious mouth watering potato recipe.In India it's quite famous over different states and goes very well with roti, poori or rice.It's spicy and rich with aroma and is suited the best as main course item.
10-12 new baby potatoes
1 bay leaf
1 chopped onion
3-4 chopped garlic cloves
1 chopped tomato
1 tsp ginger paste
1 tsp onion paste
1 tsp cumin paste/powder
2 tsp green chilli paste
½ tsp red chilli powder for color
½ tsp sugar or according to taste(Optional)
½ tsp garam masala powder
½ tsp turmeric powder
salt according to taste
Boil the potatoes in pressure cooker but don't over boil.
Peel the potatoes and cut each in 2 half portions.
Marinate potatoes with turmeric powder and salt.
Take a pan and heat oil.Now fry the potatoes little in small batches till golden brown.
Keep the fried potatoes aside and take some fresh oil and heat.
Put the bay leaf.Then fry garlic cloves and chopped onion till golden brown.
Put the chopped tomato and fry till it gets soft.
Put onion paste,ginger paste,cumin paste,chilli paste and red chilli powder and add half cup of water.
Add some salt.And keep stirring in medium flame till the spices start releasing oil.
Add the fried potatoes and sugar and keep stirring for 5 more minutes in low flame.
Now add 2 cup water into the mixture and cover it.
Keep it in low flame till water gets dried almost(3/4 part).
Now add the garam masala.Stir well and keep the dish on flame for other 5 minutes.
When water gets dried almost 90% then switch off the burner.
If the size of potatoes are big then try to cut them in pieces.In that way the potatoes will absorb the spices more and taste more of course.And you can avoid green chilli paste totally if you wanna cook it in red chilli powder only.Just increase the amount of red chilli powder in that case.
